The Best Vegetable Soup Recipe is hearty and comforting! Packed with veggies, healthy, and easy to make in slow cooker, Instant Pot or on the stove.

2 large carrots, peeled and diced
2 large potatoes, peeled and cubed
2 celery stalks, sliced
1 large red bell pepper, diced
1 large onion, chopped
2 large tomatoes, diced (or 1 x 400g tin diced tomatoes)
1 cup sweetcorn (fresh, frozen, or canned, drained)
1 medium baby marrow (zucchini), diced
2 cloves garlic, grated
1 tablespoon olive oil or sunflower oil
1 teaspoon dried oregano
1 teaspoon smoked paprika (adds a rich, smoky flavour!)
2 bay leaves
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
6 cups (1.5 litres) vegetable or chicken stock
Optional toppings:
Grated Parmesan cheese
Plain yogurt or sour cream
Fresh dill or parsley for garnish
Prep Time: 10 min | Cook Time: 30 min
1️ Prepare the base:
In a large pot or Dutch oven, heat the oil over medium heat. Add the chopped onion and sauté for 3 minutes, stirring occasionally.
2️ Add the seasoning:
Stir in the smoked paprika, oregano, salt, pepper, and bay leaves. Cook for 1 more minute, stirring frequently.
3️ Simmer the soup:
Add the potatoes, carrots, celery, bell pepper, stock, and diced tomatoes. Stir well, bring to a boil, then cover and reduce heat to low. Let simmer for 25 minutes, or until the potatoes are fork-tender.
4️ Add the final veggies:
Stir in the baby marrow (zucchini) and sweetcorn. Cover and let simmer for 5 more minutes.
5️ Finish & serve:
Turn off the heat and stir in the grated garlic and fresh dill. Serve hot, garnished with Parmesan cheese and a dollop of yogurt or sour cream.
